For a product as simple as pasta, quality of ingredients and raw material is what makes the diffference and we know it. That’s why we choosed to process only high quality flours from organic farming.
To preserve at best all their characteristics, flour are transformed in pasta staright after milling in order to reduce processes of oxydation and degradation.
Many cereals and raw materials come directly from the region of Langhe, the magnificent hills which sorround our facility, famous in literature for writers as Pavese and Fenoglio and known for their delightful products.
None of our products contains soft wheat: tagliolini and tagliatelle are made with ‘Senatore Cappelli’ durum wheat semolina.
The world of flours is huge and full of many varieties: we offer you a wide range of choice with our pasta.
We have chosen to use flours coming from local mills and we promote the use of ancient grains
