For our pasta we use a blend of old varieties grown locally: ottofile, Marano and Pignolet.
Corn ottofile is a native variety of the Colline Alfieri province of Asti territory, characteristic for having eight rows of grains, intense red color, very glassy grain, unique organoleptic characteristics thanks to the proximity of the river Tanaro.
The variety Marano is native from Vicenza plains, while the Pignolet is more typical of the Canavese area.
In addition to being gluten-free, this mixture has a beautiful bright yellow color and a unique taste, really try!
