The multi-grain flour we use for our pasta is stone-ground by the Mulino Sobrino mill in La Morra and it contains five grain varieties from the surrounding Langhe hills. All these grains are nowadays produced in limited quantities, but their quality is undeniable. This flour, which contains wheat, barley, rye, oat and rice is organic and locally sourced.

Mulino Sobrino uses local grains thus guaranteeing that our raw materials are free from GMOs. Their use of slow milling techniques brings out all the nutrients and natural properties of the flour.

We use this fresh-milled flour to produce different types of artisanal wholegrain pasta.
