For our spelt based products, we use monococcum spelt flour stone-ground by our partner La Raia, a biodynamic farm just a few km away from us, in the Gavi hills.

Monococcum spelt is an ancient variety, father to all wheat. For over two thousand years it was a staple food in the diets of all Asian and Mediterranean populations.

Spelt is a well-balanced ingredient. It has a high energy content, it is healthy, nutritious, easy to digest and it contains antioxidants.

Our products containing biodynamic spelt are identified by a dedicated label and are always locally sourced.
